Curry Filo triangles with salad and light dressing
Ingredients:
40g lean Premium minced beef
40g onion ( diced )
40g sweet potato
40g potato
40g pumpkin
40g eggplant
1 teaspoon curry paste
4 sheets Filo pastry
Spray olive oil
1 tablespoon water
Pinch season all or salt
5ml milk
This recipe makes 6 triangles. You can multiply it and make many more to freeze
Method:
Pre heat oven to 180c
Lightly spray a non stick pan with olive oil and brown onions on medium heat
Add mince and brown
Add finely diced sweet potato, potato, pumpkin, eggplant, curry paste and a half a pinch of salt.
Stir while cooking for about 5 minutes, and everything starts to soften
Add the tablespoon of water and cover with a lid, turn the heat down to low and let the mixture cook slowly under the lid for about 10 minutes, stir occasionally.
While the filling is cooking, take one of the Filo sheets and lightly spray with olive oil, then place another sheet over the first one very carefully. The spray oil is now in between the two layers of Filo pastry. Cut these sheets into 3 even strips along the length of the pastry.
Repeat this process of spraying a sheet of pastry and then laying another sheet over the first one, then cutting that set into 3 strips. You should have 6 double strips of pastry now
Once the filling is cooked, divide it into 6
Place 1/6 of the filling on to one end of a pastry strip and start to fold the end over the mixture, keep folding and turning till all the strip is used up and you have a Filo triangle with curry filling.
Repeat this process another 5 times
Place triangles onto a baking tray covered in baking paper
Brush milk lightly over the top of each triangle then sprinkle lightly with season all salt
Bake in a moderate oven till golden, about 10 to 15 minutes, depending on your oven.
Serve with a cup of salad that includes little tomatoes, cucumber, carrot, salad leaves and a small amount of light salad dressing. I used an oil free balsamic dressing
I had enough calories left to have 6 grams of feta with my salad
And one strawberry to finish dinner off nicely
Followed by another cup of green tea
That wasn't so hard after all! And tomorrow, I'm going to have a little cake!
